Ingredients:

4 large bell peppers, any color
1 lb ground beef
2 cups cauliflower rice
1 cup shredded cheddar cheese
1/2 cup marinara sauce (make sure it's sugar-free to keep it keto-friendly)
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 teaspoon olive oil
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)


Directions:

  • Preheat Oven: Preheat your oven to 375°F (190°C).


  • Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Blanch the peppers in boiling water for about 5 minutes to soften slightly. Drain and set aside.
