Keto Zucchini Lasagna Recipe


Ingredients:

  • 2 large zucchinis, thinly sliced lengthwise
  • 1 lb ground beef
  • 1 cup marinara sauce (sugar-free, keto-friendly)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish


Cooking Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the Zucchini: Slice the zucchinis lengthwise into thin strips. Lay them out on paper towels, sprinkle a little salt, and let them sweat for about 10 minutes to remove excess moisture. Pat them dry with paper towels.
  3. Cook the Ground Beef: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute. Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat.
  4. Add Marinara Sauce: Stir in the marinara sauce and Italian seasoning into the ground beef. Simmer for about 10 minutes. Season with salt and pepper to taste. Remove from heat.
  5. Mix Cheeses: In a bowl, mix the ricotta cheese, 1/4 cup of Parmesan cheese, and egg. Season with a pinch of salt and pepper.
  • Assemble the Lasagna: In a baking dish, layer as follows:A thin layer of the meat sauce.
  • Zucchini slices to cover.
  • Half of the ricotta mixture.
  • A layer of mozzarella cheese.
  • Repeat the layers, finishing with a layer of meat sauce. Top with the remaining mozzarella and Parmesan cheese.
  1. Bake: Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and slightly golden.
  2. Cool and Serve: Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh basil leaves and serve.
